Mise en Place for Baking

Just as for any other cooking method, mise en place for baking is extremely important. There are a few extra things to consider:

• Such tools as the bench scraper, stand mixer, thermometer , and baking stones can come in handy when making bread. They are all solid investments.

• Place the rack in the middle of the oven, the best place for even baking. If using a baking stone, make sure to preheat it in the oven for at least an additional 20 to 30 minutes before baking.

• Give yourself plenty of space for kneading and shaping or rolling the dough. It’s tough to make good dough in a crowded work area.

• Prepare a warm place in the kitchen for the dough to rise. If the kitchen is cool, it will take longer for the yeast to work its magic. Closing any drafty windows or doors or placing the dough near the preheating oven are just some suggestions.

• Set up a cooling rack to place the bread on, after it comes out of the oven. Placing this near a drafty window or doorway can be a good thing, to help cool the bread more quickly.
